Title: What's your favorite kind of pie?

Mine is blueberry - love blueberry pie! Peanut Butter, Pumpkin, Apple and Key Lime follow. It's always a good time for pie ( bonus points for movie reference! ). If enough response to this thread, I'll create a poll to determine THE pie of the 2nd Apocalypse.

It counts ... "pie" in the abstract, what is "pie" to you - so your contribution/insight is valid. You from or currently live in Spain? My father's parents were born in Spain in an area/people called the Gallegos. He didn't teach his sons Spanish which is unfortunate, I could've been bi-lingual. He spoke beautiful ( or so I'm told ) Castilian Spanish.

I live in Mallorca (in the Balearic islands in the Mediterranean - as you can imagine I don't usually speak english, so this explain the funny expressions I use in the forum, lol).
Galicia it's on the other side of the country, and it is a nice place, with beautiful landscapes and incredible food (seafood, specially) and wines (mostly the famed albariño white wine).
I have lots of friends from there, and they usually speak both spanish (castellano) and galego (their own language), as we majorcan speak spanish and our mother tongue català (in our own balearic dialects).

From Galicia, the desserts I prefer are the filloas (some kind of crêpes) and tarta de Santiago (Santiago's cake or St. James' cake).

And gallegos you can find all around the world. Hahaha. I have never travelled to any country where I didn't find some.

The seafood - that explains my Abuelita making octopus during the holidays  :D

My island is full of beautiful sand beaches, we are between Ibiza and Menorca, very nice places too to spend a holiday.

The octopus is a typical and tasty dish from Galicia, pulpo a feira. I love it.

Good food is serious business.

Now, my real passion is for cookies.  A fine Linzer cookie is hard to find.  Impossible here, actually, people don't seem to like cookies in this state, which seems almost pathological to me...

Ah, H - were you at ZCon this year? If I can swing it next year, I'll bring my gluten free chocolate chip cookies with me; I have Celiac, so can't reciprocate by trying any of yours if they have gluten. I would consider my recipe to be not too sweet, but not sure how low of sweet you prefer. My harsh dietary restriction is a big reason I didn't go, it's very difficult to manage. Avoiding foods with gluten is just the beginning, I have a hyper-sensitivity to cross contamination ( so while the hotel may be safe, the travel there and back may not ). While I'm humble about my intellect, I sport pride with my cookies  ;D

I don't think she did, doesn't look familiar. But she was old school, for sure. Had 30+ people shoved in the basement with huge spread of food during the holidays. And she gave coffee to us kids  ;)

Our kids are in something of the same boat (although their sensitivity level is lower), the oldest nearly died when very little from eating too much gluten.  So, I cook everything gluten-free.  Of course, I occasionally have some myself, but for the most part, it's rice flour and all that.

While I am an alright cook, I am an awful baker though, haha.  I assure you, anything I'd bake would be bad.  I let my wife handle that.

Aw, sorry to hear about the near-miss with your boy, I'm sure it was frightening - but glad to hear he's ok now. We parents typically have at least an annual heart attack moment for the safety of our children, but your situation seems it got too close for comfort.

I miss Pizza the most ( GF pizza is "ok", but grew up near this pizza place that has AMAZING pizza/garlic knots/Italian salad ... it's been quite sad missing that place ). My wife is the cook, I am the baker in the family. Got any GF dishes you want to share?

I'm originally from NY, so I miss NY pizza a great deal myself.  There really isn't a substitute though.

As for GF recipes, we really just plan meals that don't need flour, rather than try to imitate it.  The kid's taste limits what we can do, creatively.  But America's Test Kitchen has a gluten free cookbook that has a pretty good flour mix that gives some decent results (like pancakes).  Being where I am at, I also make roux out of rice flour to make gumbo, but my wife only likes that when it is relative cold (not too often down here).

Ahhhh, my hearts desire. Back in my wild days, me and best friend (whose family is all from New York. Staten Island and Bronx) took me on my first trip there a few years after 9/11. It was St. Patrick's Day when we arrived and got totally shit faced. Had everybody in the bar calling us WV, because they was so enamored by our accents and drinking abilities. Anyhow, we stop at one of those famous "Pie" shops and got a slice, my first ever. I finished it within a block turned around and went and got another. Best pizza ever! Hands down. Chicago keep your deep dish lasagna or whatever the Fuck it's is. Give me a thin slice of NY style cheese pizza and I'm golden.

But wouldn't you know it - like for real ( I know about everything I say is a lie - but not this ), the best pizza of my life was in San Francisco - OMG - it was NY style run by an Italian ( so same stuff you get in NY, just made in SF ) and changed my life. I actually re-visted just to get more of that pizza. I got married with kids, so haven't been back in a long time, not sure it's still there.

So I guess pizza pie wins the contest as best pie ...

I once drove, with a couple friends, into rural Pennsylvania to pick someone up from college.  We stopped at a pizza place, went in, figured we'd just get one pizza, so we told the woman, "one pie, with pepperoni."

Well, after several minutes of the workers curiously staring at us, seemingly not understanding, and us, wondering if they spoke English or perhaps that somehow we were not, we arrived at the revelation that calling a pizza "a pie" is apparently not something done in that neck of the woods...the women thought we wanted an apple pie.

Ironically, the only decent pizza I have ever had was from a place called Brooklyn Pizza, in New Orleans.  Fitting, really.  Most places here though fail to understand the pizza isn't just about how much cheese and toppings you can possibly pile up...

My favorite kind of pizza is one where there is more sauce than cheese though.  Fresh basil, maybe some pepperoni too.

 And here we come to the crux of pizza. Living in WV we getting meat lovers from Pizza Hut and stuffed crust pizza, gimmick pizza I grew up on. So, whilst drunk in NY and ordered my slice with pepperoni, my buddy stops me and says, "No, you don't want pepperoni, just cheese. Pepperoni ruins it." He was right, best pizza ever in my life. We do have a place in town now that is Italian cuisine and the make a passable NY style pie. Not the real deal though.

But in Italy don't ask for pepperoni because they call it just salami and some mammas will pretend not to understand you. Peperone is just the pepper.

Yeah, if the pizza is real good, you don't need pepperoni.

But most places, like Pizza Hut, the "sauce" is essentially tomato paste with water and oregano stirred in.  A definite invitation for heart-burn, especially for me.  At least, in those cases, pepperoni makes it taste like something...

Though Bakker doesn't seem to be fond of food descriptions the way George R. R. Martin is in his writing. Deranged Sranc-fueled cannibalism being the exception.

Someone mentioned strawberry rhubarb in thread - probably a tie with key lime for me, lemon being at 2. I like a little sour in the sweet. A little sorrow makes the happiness more poignant.

So I made my first gluten free cheesecake. It came out smashing, I have to tell you - but this is a great situation to vet human memory. The story behind this recipe is probably better than the cake itself.

Warning: My (mis)adventures in tracking baking recipes have had more intrigue than a good spy novel.

My father, when he was alive, for decades made this incredible Boston style cheesecake. Friends, family would come from all over to get some ( no kidding here ). People would pay him to make them ( bargain price of $25 ) and I even would pay him to make me one for when the office pool on who makes the best cheesecake would come up and I would destroy the competition. Well, one day, at a new job, yup, the pool arises and the tall talk starts. No kidding, I conceded to a girl who had bested my father's cheesecake - it was a-maz-ing. I should have known because while she was normally quite the friendly chatterbox, but when it came to this competition she only sported a icy death stare that said without sound, "I'm going to destroy you, little man". And boy, did she ever.

So I asked her for the recipe: "No". I begged her for the recipe:  "No". I offered $50 for the recipe: "No". I offered $200 for the recipe: "No". She refused at all costs and told me the story of her recipe. When she was a young girl ( 6 or 7 years old? ), she would sit on the front steps of her house to each lunch often, being outside, enjoying the sunshine and people traffic. A bag lady would typically swing by each day and she would offer the bag lady part of her lunch, small change, etc. Now, you know this isn't common, many/most people treat bag ladies cruelly. So they formed a loose friendship and she enjoyed seeing her every day. One day, she had some cheesecake and offered some to the bag lady. The bag lady in a deep East European accent ( Bulgarian? ) responded without even tasting the girl's cheesecake, "my dear child, that is not cheesecake, I will bring you cheesecake". My work friend/the girl didn't see the bag lady for a few days and then she came and brought her an entire cheesecake with the recipe - the very same which years later destroyed my father's cake.

I said, cool! Now let me have it, you have to now that I know the story: "No". Fuck me, right? Well, months go by and I stop pestering her and even forgot about it and then one day, she approaches me aggressively ( not with anger, but with determination ), "Hey, you still want that recipe for $200?". I'm like, "well, yeah". "It's yours". I was taken aback and had to ask what had changed and if everything was ok. She had serious financial problems with her husband, pissed off as all get out at her husband and didn't care anymore and simply wanted the money. I was happy, but concerned, didn't want her to betray the recipe over desperation. She replied, "Who gives a shit, it's only cake".

Now, I'm a cookie baker by trade, not cakes, and of course, being young and stupid, I didn't make the thing and lost it over the years. Now that I've got Celiac and have accepted my gluten-free life, I'm converting my recipes to be gluten free; I'll have to tell you the story behind my Forever Cookies sometime, that was a 17 year journey of madness. Just so happens, recently I decided time to recycle the graveyard of hard drives accumulating in my home office/den. I'm scanning through old files making sure I didn't miss anything from copying them over in the past. And yes, I find this old recipe, 20 years after I received it. I thought I lost it since the title was mis-spelled ( cheezecake ), so it never came up in my searches for it.

Now, am I remembering it correctly? Is it coming out the same as hers? I don't know. The taste is familiar, so I'm on the right track, but I don't remember exactly how it tasted. My family has tried it and they like it, but they resoundingly declare it's not as good as my father's.

Maybe I should have murdered one of my brothers when I first tried it all those years ago ...

I was in michigan recently for vacation, ate a bunch of cherry pie. Pretty good stuff.

I look forward to tasting your dishes, Wilshire - I believe you were one of the people helping me out with the logistics if I made it to zCon and was saying you make excellent GF dishes ... could be a faulty memory, the engine ain't what she used to be, some of my memories I suspect I'm making up.

If Heaven is configurable ( and it exists and I'm allowed entry ), mine would be me forever eating bacon. Why Gawd made the belly of a pig the tastiest, yet the most fattening/artery blocker, is a sick mystery.

I also can't eat black pepper, corn, and basically any nuts.  The black pepper one is really annoying, because almost anything you buy premade or prepackaged has some in it.

Ha, not going to derail me because I am no baker.  I'm curious how it makes up for the lack of protein to brown that the milk provides (or whatever the hell it actually does).  But if you'd rather not share though, that's cool.

Oh, fudge, you can't have nuts ( this has pecans ). Well, I don't "protect" my recipes, anyone can have it. Replace the peanut oil and butter ( in red ) with 190 grams of Butter Flavored Crisco ( 1 bar/stick if you purchase it that way - can also use 190 grams of Vegetable Oil, any oil you want really ) and 1 tablespoon of water ( bringing the total number of tablespoons of water to 2 ). Can't format well here, so I've included a picture too ( would be great if we could add attachments to our posts ). You could omit the crushed pecans, the cookies will still taste good, just come out flatter.


Forever Chocolate Chip Cookies GLUTEN FREE
By Barry Duran

Ingredients
•   330 grams Gluten Free Baking Mix
   165 grams King Arthur Gluten Free All-Purpose Baking Mix
   165 grams King Arthur Gluten Free Measure for Measure Flour
•   1 teaspoon Baking Soda
•   1 teaspoon of Salt
•   112 grams ( 1 stick ) Butter ( un-salted )
   Mostly melted – don’t completely melt! ¾ melted will do
   ( 52 - 60 seconds microwave high if cold right out of the fridge )
•   95 grams Peanut Oil
•   1 tablespoon of Water
•   150 grams Sugar ( white )
•   155 grams Brown Sugar
   Florida Crystals Organic Brown Sugar
•   1 teaspoon Vanilla Extract
•   1 Large Egg + 2 Yolks
•   120 grams Semi-Sweet Chocolate Chips
•   100 grams Pecans ( ground up fine in a blender )

Directions
1.   Preheat oven to 375 degrees F.
2.   Grind up the Pecans in a blender to be as fine as you can
3.   Whisk together Flour, Salt, and Baking soda in a bowl, set aside
4.   Combine in Stand Mixer: Peanut Oil, Butter ( mostly melted ), Water,  Vanilla, Eggs and Yokes
5.   Add/Combine Sugars into the Butter\Oil Mixture
6.   Add/Combine Flour mixture into the Butter\Oil\Sugar Mixture
7.   Stir/Knead Pecans into the Butter\Oil\Sugar\Flour Mixture
8.   Stir in Chocolate Chips ( If you did it right, dough can be rolled up in a big clean ball – the chips won’t stick in the dough well, may have to push some back in )
9.   Let Dough sit for on the counter at room temperature for 30 minutes ( do NOT refrigerate )
10.   Using a 2 ½ inch scoop, evenly scoop and roll it in your hands to make smooth balls ( If you did it right, dough will ball up easy, but will be buttery/greasy making a mess on your hands. Some chips will still fall about, just push them in )
11.   Drop the balls onto a non-stick cookie sheet ( do NOT grease or use paper )
12.   Bake: 11 minutes
13.   Remove from the oven and remove onto a wire rack to cool completely
14.   Yield: 12 cookies

I've been (in general) substituting Ghee for butter.  But I think for baking it doesn't always work the same.  But, considering that shortening seems to work, I'd guess it still should.  I will print this out and let my wife take a crack at it.  She is the baker of the household.  Even though I still need to fix her stand mixer that our daughter broke...

We use, in general, the America's Test Kitchen gluten free flour mix though.  We might try the recipe it to christen the new house though, once we move.

You can try any flour you want, but I found only 1 that will make the cookie rise ( KA's Baking Mix ... even Bisquick's GF flour mix doesn't make them rise that much ... but too much of the Baking Mix makes them a bit "cakey", and found 1/2 of it and 1/2 of something else makes them rise the same without the cakey effect ). Didn't try it with the flour you list above, give it a go and see how it turns out. Try replacing just the butter with the Ghee and see how it goes, you could improve it for all I know.

That's a very good thing as combining the wet ingredients is key in this recipe, which makes it an easier recipe than most. Most recipes try to retain the "gooiness" of butter to help make their cookies chewy ( that's tricky to make a chewy cookie that is not under-cooked - most house recipes I've had for chewy cookies were just Nestle's Toll House recipe under-cooked ). To pull this off, you use unsalted butter and mix it on a low setting ( i.e. don't heat up the butter at all, mixing on high speeds heats it up and you lose the butter texture - youtube videos show people barely mixing in the flour to retain the butter properties - so you have to have the butter sitting on the counter for hours to soften so it can be mixed at all ) - the problem with this is, while you get an awesome middle chewy texture, you lose the "magic" taste cookies get when butter melds with sugar ( you're just mixing them together, not melding ), so they can be a bit on the bland side and the recipes call for extreme measure to add some zing, like dark European chocolates for example.

My recipe calls for mostly melting the butter - notice I make it clear to not completely melt the butter, as then it loses it's greasy/blobly consistency I'm going for, but even 3/4 melted the butter is hot, so I can go the other way and meld the butter with sugar/eggs/et al without worry of heating the butter ( it's already hot ) - easier feat to pull off than barely mixing ingredients together. So I've believe I've figured out how to get the best of both worlds - mix butter with oil and meld it with the sugar. But don't super wip the wet ingredients either, using a Stand Mixer just pulse highest level for a few seconds a few times and you're good. So if Ghee is already very melty at room temperature, you won't have to heat it up in the Microwave for my recipe.

I had blueberry pie the other day. It was alright - but it was served along side strawberry-rhubarb which was far superior. I think the blueberries make it too sweet.

It's not for everyone - but for some reason, blueberry pie makes me sing a song ( gotta be careful eating it, a cant might accidentally fire off ) - a song not sung for some time now that I've been symptomatic Celiac for 5 years now - one day I'll either make myself or score a GF blueberry pie.

Peanut Butter Cheesecake is indeed another title for Peanut Butter Pie, they're the same thing. The exception being an actual cheesecake with peanut butter swirls through it ( something I think The Cheesecake Factory has, it sucks if memory serves ). But if you're talking about an Oreo cookie crust with a peanut butter filling/topping, then it's pie, not cake. That and despair is not my jam.
