Another Galician pie is the "empanada gallega". I hope that your grandma made some for you too. Obviously it's not a dessert, and it's stuffed with meat or fish.
Ah, H - were you at ZCon this year? If I can swing it next year, I'll bring my gluten free chocolate chip cookies with me; I have Celiac, so can't reciprocate by trying any of yours if they have gluten. I would consider my recipe to be not too sweet, but not sure how low of sweet you prefer. My harsh dietary restriction is a big reason I didn't go, it's very difficult to manage. Avoiding foods with gluten is just the beginning, I have a hyper-sensitivity to cross contamination ( so while the hotel may be safe, the travel there and back may not ). While I'm humble about my intellect, I sport pride with my cookies ;D

Now, my real passion is for cookies. A fine Linzer cookie is hard to find. Impossible here, actually, people don't seem to like cookies in this state, which seems almost pathological to me...

Aw, sorry to hear about the near-miss with your boy, I'm sure it was frightening - but glad to hear he's ok now. We parents typically have at least an annual heart attack moment for the safety of our children, but your situation seems it got too close for comfort.
I miss Pizza the most ( GF pizza is "ok", but grew up near this pizza place that has AMAZING pizza/garlic knots/Italian salad ... it's been quite sad missing that place ). My wife is the cook, I am the baker in the family. Got any GF dishes you want to share?
I'm originally from NY, so I miss NY pizza a great deal myself. There really isn't a substitute though.

Yeah, the place I grew up with was run by Italian New Yorkers making NY Style pizza. A couple of them didn't speak English. I've had amazing pizza in NY as well. But wouldn't you know it - like for real ( I know about everything I say is a lie - but not this ), the best pizza of my life was in San Francisco - OMG - it was NY style run by an Italian ( so same stuff you get in NY, just made in SF ) and changed my life. I actually re-visted just to get more of that pizza. I got married with kids, so haven't been back in a long time, not sure it's still there.
So I guess pizza pie wins the contest as best pie ...
What you call pizza is very different to what a made in Italy pizza is. I don't say better or worse, just different. ;)
Most places here though fail to understand the pizza isn't just about how much cheese and toppings you can possibly pile up...

Key lime and lemon are my favorite (as long as they properly make the meringue - its not just heavy whipped cream, should be light, ideally with some proper browning on the top)
Dude, BFK, just make your own whipped cream - its like 2 ingredients, sugar and heavy whipping cream. Tastes way better too.

I'm on the same path, but still overweight. My Forever Cookie recipe does have a non-dairy variant that's impressive - I can share it with you'all if interested, but don't want to derail you.

I've been (in general) substituting Ghee for butter. But I think for baking it doesn't always work the same. But, considering that shortening seems to work, I'd guess it still should. I will print this out and let my wife take a crack at it. She is the baker of the household. Even though I still need to fix her stand mixer that our daughter broke...
We use, in general, the America's Test Kitchen gluten free flour mix though. We might try the recipe it to christen the new house though, once we move.
You can try any flour you want, but I found only 1 that will make the cookie rise ( KA's Baking Mix ... even Bisquick's GF flour mix doesn't make them rise that much ... but too much of the Baking Mix makes them a bit "cakey", and found 1/2 of it and 1/2 of something else makes them rise the same without the cakey effect ). Didn't try it with the flour you list above, give it a go and see how it turns out.
Try replacing just the butter with the Ghee and see how it goes, you could improve it for all I know.

We got a cook book from them and that was the flour mix they "recommend." It's cheaper than the King Arthur ones, of course, because you mix it yourself. They even mention the KA flours and what ends up different if you use it, but I don't recall off the top of my head. I think that is highly unlikely, but it might not ruin it. The nice thing is that Ghee is perpetually about half melted at room temperature though.
I had blueberry pie the other day. It was alright - but it was served along side strawberry-rhubarb which was far superior. I think the blueberries make it too sweet.
I had a peanut butter cheesecake about a week ago...simply amazing! I consider that a pie, others might not. I won't sway on me considering it a pie. Try and sway me and you will be left in despair.
